One Pan Weeknight Sausage & Peppers
Matt is all about the Italian flavors - give him a tomato based dish with slightly spicy sausage and he will eat it for every.single.meal. This is not a joke! I, on the other hand, am the complete opposite! I need a ton of variety in my diet - no two days of eating ever look the same! What about you?! I’d love to hear from you in the comments! Makes 3-4 Servings
Ingredients:
1 tbsp cooking fat
1 yellow onion, sliced fajita style
1 package of Italian sausage (links or ground, up to you!)
1 package of frozen tri-color peppers
1 15oz can of fire roasted diced tomatoes (either plain or Italian seasoned)
2-3 handfuls of raw spinach
1 tbsp Italian seasoning
Salt & pepper to taste
Instructions:
Heat a deep skillet over medium-high heat. Add cooking fat and melt to coat the pan. Add sliced onion and a bit of salt; cook until translucent. Add sausage (if using links, slice them however you’d like!) and cook until just browned. Add frozen peppers and a bit more salt; stir occasionally. Cook until the peppers are softened and most of the liquid has evaporated. Add canned tomatoes, spinach, and Italian seasoning. Spinach will wilt quickly- feel free to add more as you finish the dish! Stir to combine everything and simmer for another 10-15 min. Serve over spaghetti squash, rice, or pasta of choice! Bonus points for finishing the dish with fresh parsley and some cheese or nutritional yeast :)
